At The Village Butcher, we believe a great fresh sausage comes down to two things: the quality of the meat inside and the casing that holds it all together. That is why every single one of our 32 varieties from the award-winning French Toulouse to the classic Pork & Fennel—is hand-linked using 100% natural casings.

Unlike the synthetic collagen skins used by mass-market brands, natural casings are a game-changer for your BBQ or frying pan.

  • They Hold the Juice: Natural casings seal the meat effectively, locking in moisture and fat as the sausage cooks. This means your sausage stays succulent and tender inside, rather than drying out or splitting on the grill.

  • The Signature Snap: There is no mistaking the texture of a real butcher’s sausage. When you bite into a hot, fresh sausage in a natural casing, you get a distinctive, crisp “snap” that synthetic skins just can’t replicate.

  • Better Browning: Because they are a natural product, they interact beautifully with heat. They caramelise evenly on the BBQ, giving you that golden-brown, smoky finish without the rubbery texture of artificial skins.

Best Way to Cook your Meat

Ribeye Steak

Rich marbling, intense beef flavour. Best for grilling or pan-searing.

Cook: 3-4 min per side, medium-high heat

Scotch Fillet

Tender, lean with good flavour. Perfect for quick cooking methods.

Cook: 2-3 min per side, high heat

Lamb Cutlets

Sweet, delicate flavour. Excellent grilled or pan-fried with herbs.

Cook: 2-3 min per side, medium-high heat

Pork Belly

Rich and succulent. Best slow-roasted for crispy crackling.

Cook: 2-3 hours at 160°C, then blast at 220°C

Buying Steak, What to look for

Buying a great steak shouldn’t be a guessing game. Whether you are after a Scotch Fillet (Ribeye) for the BBQ or a tender Eye Fillet for a special dinner, there are three key visual cues that tell you if a piece of beef is going to be tough and bland, or melt-in-your-mouth delicious.

When you visit our counter in Hauraki, here is what our butchers recommend you look for:

1. Marbling is King The single most important factor in flavour is intramuscular fat, or “marbling.” Look for the fine, white flecks of fat scattered throughout the red meat muscle, not just the thick layer on the outside.

  • Why it matters: As the steak cooks, these little pockets of fat render down, basting the meat from the inside out. This is what gives premium Wagyu and high-quality Angus that buttery texture and rich flavour. If the meat is solid red with no white flecks, it will likely be dry.

2. Colour: Darker is Deeper Don’t be afraid of meat that is a deep cherry-red or even burgundy colour.

  • The Myth: Many people think bright, light pink meat is “fresher.”

  • The Reality: Slightly darker meat often indicates that the beef has been hung or aged properly. This aging process allows enzymes to break down tough muscle fibres and concentrate the beefy flavour. Our Dry-Aged Beef will naturally be darker than standard cuts, and that is a sign of superior quality.

3. The Fat Cap (Don’t Trim It Yet!) While we can trim steaks to your liking, we always recommend leaving a thin layer of fat on the outside (the “cap”), especially for Sirloins and Rumps.

  • Cooking Tip: That strip of fat protects the meat during high-heat grilling and adds a massive amount of flavour to the pan juices. You can always cut it off on your plate, but you can’t put the flavour back in once it’s gone!

4. Thickness Counts The biggest mistake home cooks make is buying thin steaks. A thin steak will often overcook in the middle before it gets a good crust on the outside.

  • The Butcher’s Rule: Look for a steak that is at least 2.5cm to 3cm thick (about two fingers’ width). This allows you to get that perfect char on the BBQ while keeping the centre juicy and medium-rare.

It’s Bacon…but it’s Tastier

Once you try our homemade bacon, you will never go back to the supermarket stuff. At The Village Butcher, we believe bacon should be celebrated, not mass-produced.

The Problem with Supermarket Bacon We have all been there: you put a full pan of bacon on the heat, and five minutes later, it’s swimming in water and has shrunk to half the size. That is because mass-market bacon is often “pumped” or injected with brine and liquid smoke to increase its weight. You end up paying for water.

The Village Butcher Difference We make our bacon the traditional way, right here in Hauraki.

  • Dry Cured: We cure our pork loins and bellies by hand using salt and traditional spices. This process draws moisture out rather than pumping it in, concentrating the meat’s natural flavour.

  • Real Smoke: We use real wood smoke to achieve that rich, savoury aroma—no artificial flavour sprays here.

  • No Shrinkage: Because our bacon isn’t full of water, it crisps up beautifully in the pan and stays the size you paid for.

Forget the watery, processed slices from the deli aisle. At The Village Butcher, our ham is the real deal, made from 100% New Zealand Pork and smoked to perfection.

The Taste of Tradition We treat our ham with the respect it deserves. Whether it is our popular Champagne Ham (boneless and easy to carve) or our traditional Cooked on the Bone variety, the difference is in the cure.

  • NZ Pork: We only use premium, ethically raised New Zealand pigs. You can taste the difference in the texture, which is meaty, succulent, and never rubbery.

  • Wood Smoked: Our hams are naturally wood-smoked to give them a deep, golden colour and a rich, savoury aroma that pairs perfectly with mustard and pickles.
